Drink Recipe: The Manhattan

Invented at New York City’s Manhattan Club in the late 1800’s, the Manhattan is one of the few classic cocktails made with whiskey or bourbon instead of clear spirits, such as gin or vodka.

To make a classic Manhattan, combine 1 1/2 oz. of whiskey or bourbon, 3/4 oz. of sweet vermouth, and a couple of dashes of Angostura bitters in a cocktail shaker filled with cracked ice. Don’t shake it!!! Strain the contents into a old-fashioned glass and add a Marashino cherry. Be sure to serve it “on the rocks.” (That means “with ice” to you newcomers.)

You can mix it up a bit with a dry Manhattan (use dry vermouth instead of sweet vermouth; garnish with a lemon peel and an olive instead of a Maraschino cherry) or a perfect Manhattan, which uses 3/8 oz. each of dry and sweet vermouth.

Drink Recipe: The Classic Martini

Leather Bar SetPerhaps no other drink embodies both simplicity and sophistication like the classic martini. But what at first seems so simple really isn’t!

You have tough choices when striving for the perfect martini: Gin or vodka? Dry or not? Shaken or stirred? Olive or lemon?

Let’s take them one at a time:

Gin or vodka? If you go to a bar and you want a vodka martini, you say, “I’ll have a vodka martini.” But if you want a gin martini, you just say, “I’ll have a martini.” There’s your answer: the classic martini is made with gin. However, James Bond–perhaps the most famous martini drinker of all–favors vodka martinis.

Dry or not? The dryness of a martini is a measure of how much vermouth it contains (or, more exactly, the gin-to-vermouth ratio). Martinis have become drier over time, with less vermouth. In the 1940s, it was common to have a gin-to-vermouth ratio of 2:1; now the ratio is commonly 3:1 or even higher. A medium martini has 2 ounces of gin to 1 ounce of dry vermouth–a dry martini has 2 1/2 ounces of gin and just 1 tablespoon of dry vermouth, and an ultradry martini has 2 1/2 ounces of gin and only a teaspoon of dry vermouth. Ultimately dryness is a matter of taste, but as my father (perhaps the original Man About Town) insisted that a good martini involved pouring the gin and passing the bottle of vermouth over the gin–being ever so careful to not actually let any vermouth get into the martini!

Shaken or stirred? Reasonable people can disagree on this one. Shaking a martini can lead to a more diluted drink, as shaking causes more ice to melt.

Olive or lemon? Remember, we’re talking about a classic martini, so there’s only one right answer on this one: olive. And if you want a “dirty” martini, add a little olive juice to the drink.

All of those questions aside, the key to a good martini is icy coldness. While there’s nothing more refreshing than a cold martini, there’s also nothing more disappointing than a lukewarm martini. To make the perfectly chilled martini, pour the ingredients into a medal martini shaker along with cracked ice. Stir gently or shake briefly and strain into a chilled martini glass.
